The librarian at our school read "The Turnip" the other day. It is a multicultural book about a man who plants a turnip and then it gets so big he cant pull it out of the ground. It is a repitition story that young children will be able to help tell. They would also be able to "read" the story themselves by looking at the illustrations. Check it out if you need another picture book/multicultural entry for your annotated bibliography.
